Creamy White Minestrone

So you've had and maybe even made Classic Minestrone probably on more than one occasion, but have you had White Minestrone? I'm not the biggest fan of tomato based soups, but I wanted a veggie hearty soup for the cold winter months so I decided to give White Minestrone a try, and I love it!

You can add mushrooms or zucchini or even potatoes, really whatever veggies you like to this soup and easily make it gluten free by swapping out the all purpose flour for brown rice flour and use gluten free pasta. If using gluten free pasta, I would cook the pasta separately from the soup and add it once it has cooked. Also reduce the vegetable stock in the recipe by 2 cups if doing this option.
