Easy Carrot Ginger Soup


Carrot Ginger soup to me, is a classic. This recipe is super easy to put together and takes minimal time to do so! Get the most flavor into your soup by using freshly picked, local carrots around this time of year! Between the fresh golden like carrots and the coconut milk, this soup is extra creamy without using dairy cream.

It freezes very well so you can prep ahead for those colder months that are on the way!
