Blackberry, Lime & Poppyseed Loaf

There's something so 'homemade' and comforting about a loaf. And unlike a round iced cake, an iced loaf is much more approachable and easier to put together if you're not the world's best baker!

While loaf cakes can still be sweet and dense, I wanted to bring some lighter flavours in to this one for summer. In comes fresh lime juice and zest and blackberries !

It blows my mind that people out there still think that 'vegan baking' is not good. Here we are making a loaf with no eggs, vegan butter and vegan sour cream and still achieving a rich, buttery and moist 'cake' that will delight anyone no matter their food choices !


Let's talk about the ingredient brands for a second. I switched over to using the PC Vegan butter for my baking about 6 months ago and haven't turned back. While I still use Earth Balance for some things, and I deeply love their brand values, the price of it is high and I can't justify it for baking ( I do a lot! ) when there's an alternative more affordable option. The PC vegan butter is actually cheaper than some dairy blocks of butter so you can share that info with your omni friends ;)

We also really love the PC sour cream as well. Again, great price for what you get, but it does have a coconut taste to it just fyi. For this recipe and other baking though, it doesn't matter.


I made this loaf for my dad for fathers day and it was perfect for the occasion. It freezes really well too, so you can keep it in the freezer if you want a little something sweet or like to have something for when friends and family drop by!


It can also be made with fresh blueberries instead if that's what you prefer or have on hand.
