Mommas Mac Salad
I think many of us have one of those nostalgic recipes that our parents use to make when we were kids. It brings you back to your childhood, you crave it when you're feeling down and no matter what, it's always good. I remember my mom always making the best Tuna Pasta Salad; which, obviously this recipe is not! My mom has four kids so a can of tuna, some veggies, miracle whip and pasta was an affordable option that all of us loved. Over the years, my mom adapted her own classic pasta salad recipe into what it is now and it's one I've never tired of, and one that leaves the sweet fishies alone ;)
A combination of apple, yes..apple! With chopped veggies, Cavatappi pasta, aka spiral macaroni (or whatever type of pasta floats your boat) coleslaw mix and craisins with a creamy dressing, this pasta salad will surely become a family classic for you too. Not to mention it's perfect for those summer months to pair with BBQ'd veggie burgs & sausages!
As always, feel free to make this recipe your own, throw in your favorite veggies & maybe even add some sunflower seeds. Get creative and use what you have!
I highly recommend making it in the morning and letting everything mingle, or even making it the night before you want to eat it. It keeps in the fridge for 3-4 days so it's great to enjoy all week!
