Quick Summer Bruschetta with Zengarry Basil Pesto

Bruschetta is just one of those dishes I never get sick of! Seriously, how could you?

I love my take on a Summer Bruschetta (if I do say so myself) because it combines fresh tomatoes with sundried tomatoes for a nuance of beautiful flavours. Another necessity for the perfect Summer Brushcetta is a beautiful fresh Pesto like the one from my friends at Zengarry. It adds some beautiful depth and herbiness to this appetizer. Lastly, because I added some of Zengarry’s delicious (and I mean DELICIOUS) pesto, I opted for parsley instead of the traditional basil. Serve this beautiful appy up at your next Summer gathering and I promise you, everyone will be grabbing several pieces! You can make the tomato mixture the morning of, to save time, and to also allow the flavours to marinate together.
